Spelt is an ancient grain relative of wheat that has a much lower gluten content (about 20% of wheat). Like our wheat flour, this comes from farms practicing regenerative agriculture. Its nutritional value is better than wheat, with more of the minerals and vitamins contained in the endosperm part of the grain that makes white flour.
